Yin-Yang Hot Pot (Handmade Brass)
Handmade to order for The Mala Market by artisans in China, this "yin yang" brass pot is the style used in upscale Sichuan hot pot restaurants and is also the perfect vessel for home hot pot, providing both superior heat conduction and modern style.
The streamlined design, brushed brass and "ear" handles provide both pleasing form and efficient function. The securely welded yin-yang divider separates the pot so it can be used for two different soups, which is popular in Chengdu and Chongqing style hot pot. One side is for the numbing and spicy mala broth and the other side is for a mild mushroom, herbal or bone broth.
Made from heavy-gauge brass, the pot weighs almost 4 pounds. Its bottom is lined on the underside with induction-compatible stainless steel, so it can be used on induction or gas heat sources.
Please note: Because the brass hot pots are handmade, all of them have some slight imperfections. But the remaining pots have slightly more imperfections, so we are discounting them. There are subtle indentions on the inside of the bowl where the handles are welded to the pot, and the matching brass welding material is visible where both the handles and center divider are attached. Additionally, the dark metal material that adheres the induction panel to the bottom of the brass bowl leaves a dark ring on the bottom of some of them (see third photo), and there may be very tiny stray drops of this dark metal on the inside of the bowl. After you make hot pot one time, these flaws will hardly matter, as the bowl will acquire a darker patina each time you cook, as brass naturally does.
The soup bowl has a diameter of 13 inches, and each side of the pot holds 8 cups (about 2 liters) of soup broth, so 4 liters total. Considered a medium pot, it is designed to serve 4 to 6 people.
Made from food-grade brass, the pot is not treated or lacquered and will acquire a patina quickly. Especially after it interacts with the acids in hot pot soup, it will gain a darker-hued palette, a color that many prefer, though it can be brightened with metal cleaner.
