Dried shitake mushrooms are used throughout China to add intense umami to dishes. These are processed naturally, with no additives or preservatives. They are de-stemmed and sliced and ready to be used. Before adding to braises, stir-fries or salads, the mushrooms must first be rehydrated. Place them in a small bowl, pour boiling water over them, weigh them down with a small plate so they are below the water line, and soak until soft.
