Dried shitake mushrooms are used throughout China to add intense umami to dishes. These are medium-large with small stems and are grown and processed naturally, with no additives or preservatives. (Note that the brand is different than shown in photo, and both the mushrooms and the package are larger.) Before using in braises or stir-fries, the mushrooms must first be rehydrated. Place them in a small bowl, pour boiling water over them, weigh them down with a small plate so they are below the water line, and soak for about 30 minutes.
