Tian mian jiang, or sweet wheat paste, is a fermented sauce made of wheat flour and salt. It sometimes includes soybeans and is also known as sweet soybean paste. Despite the name it is not particularly sweet, nor is it spicy; it is just pure savory umami. It makes a great stir-fry sauce base on its own or combined with Pixian chili bean paste, as it is in twice-cooked pork. We also use it in our dan dan noodles. We source both a version made in Sichuan and this product made in Shandong Province by the well-known Shinho company. Go here for more information on tian mian jiang.
