Er jin tiao, or "two golden strips" chilies, are 5 inches to 6 inches long and are the mildest of our four chili offerings, with a moderate, fruity heat. These are the chilies that in their fresh form are used to make fermented chili bean paste (douban jiang) and pickled chilies for cooking. The dried version can be used when less heat is desired in a dish or to give depth in braised dishes such as hong shao rou. Sourced directly from Chengdu spice markets, they are hand selected from new crop, with no impurities or additives. Store in a cool, dark place or, for longer term, in the freezer.
