Sichuan Sweet Wheat Paste (Sweet Flour Sauce, Tian Mian Jiang)

Note: The date stamped on the packaging of this product is not the expiration date; it is the date the product was manufactured. The best-by date of September 2020 is on the English label. Once refrigerated, this product lasts pretty much indefinitely. A new shipment is due in late July.  

Tian mian jiang, translated as sweet wheat paste or sweet flour sauce, is a fermented sauce made of wheat flour and salt. Despite the name it is not particularly sweet, nor is it spicy; it is just pure savory umami. It makes a great stir-fry sauce base on its own or combined with Pixian chili bean paste, as it is in twice-cooked pork. We also use it in our dan dan noodles and other dishes that call for a flavored pork mince. 

The Juan Cheng Pai brand is famous as one of the original producers of Pixian douban jiang (chili bean paste), but they also produce a stellar version of this other indispensable Sichuan sauce. Go here for more information on tian mian jiang.
