Sichuan Pepper Oil (50 Hertz)
If you're one of those people who's got hot sauce in your bag, then you might want to make room for this travel-size bottle of Sichuan pepper oil too after you try it and become addicted.
Sichuan pepper oil is not a hot sauce but a fragrant numbing sauce made by infusing fresh green Sichuan pepper in top-quality Sichuan rapeseed oil. It smells of citrus and intriguing florals and puts "a tingle on your tongue," as 50 Hertz describes it.
Sichuan boasts various species and varieties of both red and green Sichuan pepper. While our larger bottle of Sichuan pepper oil is made in Sichuan from green Sichuan pepper called teng jiao (vine pepper), this small bottle is made in nearby Chongqing from a variety of green Sichuan pepper called jiu ye qing (nine green leaves). In truth they taste very similar to each other and both quite different from red Sichuan pepper oil, which is less popular in Sichuan than green.
The 50 Hertz brand is brought to you by Yao Zhao, an American resident who grew up in Chongqing and missed what was for him the everyday taste of Sichuan pepper. He returned to Chongqing and followed his nose to find his favorite example of Sichuan pepper oil and bring it to the U.S.
Yao champions the oil not just for Sichuan food but for pasta, salads and numerous other Western foods, where it brings an unexpected taste and tingle. In fact, his brilliant brand name, 50 Hertz, refers to the electric frequency of Sichuan pepper vibrations on the lips and tongue.
Store in a cool, dry place or refrigerate to prolong life.
