Dried shiitake mushrooms are used throughout China to add intense umami to dishes. Flower mushrooms, hua gu, are a prized type of high-grade shiitake that are naturally cracked along the surface, making them resemble flowers. These hua gu are processed naturally, with no additives or preservatives.
Before adding to braises, stir-fries or salads, the mushrooms must first be rehydrated. Place them in a small bowl, pour boiling water over them, weigh them down with a small plate so they are below the water line, and soak until soft.
