These medium-thick, round rice stick noodles are made in the Guangxi autonomous region for its famous Guilin mi fen, or rice noodle dishes of various kinds from the town of Guilin. Yunnan's renowned mi xian noodles are often made with this kind of rice noodle as well, and in fact rice is the noodle starch of choice throughout southern China and down into Southeast Asia. These are the perfect weight to stand up to the spicy and sour sauces and broths that these noodles are generally served with. Prepare according to package directions (in English!).
