Zi dan tou, or bullet head chilies, are 1.5 inches to 2.5 inches long and are fatter than our other chilies. They are the second-hottest of our three chili offerings, and are medium-hot. (As with all dried chilies, the heat is controllable: Leave chilies whole for less heat, cut them in half and include the seeds in your dish for maximum heat.) These are the chilies used in Chongqing chicken with chilies (la zi ji); a spicy version of gong bao (kung pao) chicken; and any other dish where you want the pepper to make a statement in both visual appeal and heat level. Sourced directly from Chengdu spice markets, they are hand selected from new crop, with no impurities or additives. Store in a cool, dark place or, for longer term, in the freezer.
