All of China loves a good skewer of grilled meat or veggie fresh off the street vendor's brazier or served in Xinjiang-style restaurants. Shao kao, or Chinese BBQ, is usually heavy on the chili and cumin, and this version from Sichuan's Youjia (Youjoy) is an addictive example. You can, of course, make the spice mix yourself, but you'll still often find yourself reaching for this perfect blend.
