Tian mian jiang, or sweet wheat paste, is a fermented sauce made of wheat flour and salt. It sometimes includes soybeans and is also known as sweet soybean paste. Despite the name it is not particularly sweet, nor is it spicy; it is just pure savory umami. It makes a great stir-fry sauce base on its own or combined with Pixian chili bean paste, as it is in twice-cooked pork. We also use it in our dan dan noodles. And outside Sichuan cuisine, it is best known as the sauce traditionally served with Peking duck.
