The company did not have any of this sauce sufficiently fermented and ready for packaging at the time of our last order, so we will not have a new shipment for a few months. 

Tian mian jiang, translated as sweet wheat paste or sweet flour sauce, is a fermented sauce made of wheat flour and salt. Despite the name it is not particularly sweet. Nor is it spicy; it is just pure savory umami. It makes a great stir-fry sauce base on its own or combined with Pixian chili bean paste, as it is in twice cooked pork. We also use it in our dan dan noodles and other dishes that call for a flavored pork mince. 

The Juan Cheng brand is famous as the original producer of Pixian doubanjiang (chili bean paste), but it also produces a stellar version of this other indispensable Sichuan sauce. Go here for more information on tian mian jiang.
