Tian mian jiang, or sweet wheat paste, is a fermented sauce made of wheat flour and salt. It sometimes includes soybeans and is also known as sweet soybean sauce. Despite the name it is not particularly sweet, nor is it spicy; it is just pure savory umami. It makes a great stir-fry sauce base on its own or combined with Pixian chili bean paste, as it is in twice-cooked pork. We also use it in our dan dan noodles. The Juan Cheng Pai brand is famous as one of the original producers of Pixian douban jiang (chili bean paste), but they also produce a stellar version of this other indispensable Sichuan sauce.
