    Made in Guizhou, the Home of Chili Crisp

    While Sichuan is renowned for its chili oil, Guizhou Province is the home of the type of chili oil that's chock-full of crispy bits and nuts and is referred to as chili crisp or chili crunch in English.

    We can thank Lao Gan Ma for taking this style of chili sauce from Guizhou to the far corners of the world, but "The Godmother" is not the only maker of Guizhou-style chili crisp. The Mala Market's Guizhou Chili Crisp is also made in the province, in the same style as LGM but with quite a different taste, with high-quality ingredients and without the preservatives or gluten.

    Made to order for us in small batches in Guiyang, the provincial capital, it uses all-premium ingredients, starting with a blend of local chilies from Guizhou, which is widely acknowledged as the premier chili producer in China. Guizhou’s cuisine, like Sichuan’s, relies heavily on chilies, and the locals possess a love of and expertise in chili cultivation.

    Like our Chengdu Crispy Chili Oil, it starts with a base of cold-pressed roasted rapeseed oil, which gives chili oil throughout Southwest China its inimitable toasty taste. It is loaded with crispy garlic and ginger and whole roasted peanuts, with very little free oil. It is meant to be used as a table condiment, for topping anything and everything that could use a spicy, crunchy, umami boost.

    We taste-tested our way through Guizhou, and this was the best, moderately hot chili crisp we found. Thanks to the locals' unmatched know-how with chilies, its relatively few ingredients deliver a powerfully tasty punch.

    Note its generous size of 8 ounces in a world of 4-6 ounce chili crisps.

    A Note on MSG: Monosodium glutamate has been used for decades in Chinese products and recipes. MSG is simply the salt form of glutamic acid, an amino acid that stimulates umami receptors on the tongue. Because it contains 60% less sodium than table salt, many chefs use it to intensify flavor while dramatically reducing salt content in their dishes. That is why you will find a small amount of MSG in some traditional Chinese products and Mala Market-branded sauces.

    The belief in the U.S. that MSG is bad for you is based on pseudoscience, as decades of rigorous, double-blind, placebo-controlled scientific studies have repeatedly debunked the myth that MSG causes headaches, numbness or other adverse reactions. Less than 1% of the population may have mild, temporary sensitivities to large doses of MSG (which are also found naturally in tomatoes, cheeses and mushrooms).
