Sichuan Dipping Chilies: This super popular condiment is an irresistible blend of chilies, Sichuan pepper, nuts and numerous other seasonings and secret ingredients. It is called gan die in Mandarin, meaning dry dish, but a better translation for it is chili dip or dipping chilies. A good gan die is one that tastes great licked straight off your fingers, and this one fits that bill: It is nicely spicy, but not too hot to enjoy in generous amounts. It is spicy, nutty and tingly with just the right amount of umami and heat. 

Dipping chilies make a frequent appearance in Sichuan, served in a little pile as a dry dip with Sichuan hot pot, Sichuan-style shao kao BBQ and fried or roasted foods. Just drag any morsel that's not flavorful enough straight through that chili dip!

Our line of shao kao spices features the Chinese barbecue flavors you'll find throughout Western China—from the far west region of Xinjiang, where Muslim grillers have perfected cumin-dusted lamb skewers, to the country's southwest, where Sichuan BBQ features chilies and Sichuan pepper in abundance on all manner of meat, seafood and vegetable. 

Made for us in small batches in Chongqing—where they like their grilled foods spicy!—this is a chili-based spice line. But the three flavors have varying levels of heat. Here are the shao kao spices included in this collection and their main flavors:

  • Fragrant Hot: featuring chili, cumin, Sichuan pepper. We think of this smoky, spicy, tingly blend as the classic of Western China, featuring the three main flavors that combine to make Chinese skewers unlike any other in the world of grilled foods.
  • Tingly Hot: chili, Sichuan pepper (no cumin). This blend is the quintessential flavor of Chengdu and Chongqing barbecue, where chilies and Sichuan pepper rule.
  • Smoky Cumin: cumin, chili (less spicy, no Sichuan pepper). This is the classic flavor of Xinjiang and other Northwest China provinces, where cumin is the magical match for lamb skewers, roasts and stir-fries.

Equally great for grilling, oven roasting and air-frying, you can use these spice blends with our recipes for Sichuan shao kao and vegetarian shao kao or anywhere else you'd use a super flavorful spice seasoning or rub. 

Note the large size of the glass spice jars compared to most spice jars on the market.
