Super Mala Collection

If you are a fan of Sichuan cuisine, then you know the importance of mala to authentic taste. This Super Mala Collection includes the most-used ingredients for creating ma and la, the defining tastes of Sichuan food. 'Ma' refers to the tingly, citrusy taste of Sichuan peppercorn, and our premium red Sichuan pepper imported directly from Hanyuan County, Sichuan, is the freshest available in the U.S. Our green Sichuan pepper is even more citrusy and numbing and has a distinctly different flavor profile.

'La' refers to the heat of chili pepper, and this kit includes two must-have forms: dried whole facing-heaven chilies as well as fatter bullet-head chilies to be used in stir-fries, and Sichuan hot chili flakes to be used in making chili oil, an essential ingredient in cold dishes and sauces. The soul of Sichuan cuisine is doubanjiang, or chili bean paste, made in Pixian County. This kit includes a large package from the oldest and most esteemed maker.
