This will be a short one, as we're writing mainly to let you know that we will take orders for Christmas delivery through December 15. Some orders placed after that date will also arrive by December 24, but the 15th is a conservative date that should allow everything to arrive on time according to the carriers' cutoff dates.

However, there are no guarantees during this time of supply chain chaos, so the earlier the better! You don't want your loved ones to miss out on Sichuan pepper grinders in their stockings or your colleagues to go without this presentation-worthy handmade soy sauce

Singapore-crafted Fossa Chocolate first caught our attention when they introduced an exquisite bean-to-bar chocolate that features the flavors of mala. The first bite of this unique Spicy Mala bar blew us away, because it actually tastes like a Sichuan mala stir-fry, not only spicy but really and truly numbing from its generous helping of Sichuan pepper amid the dark chocolate. 

Our tasting then moved on to the company's White Sesame & Seaweed bar, a savory-sweet flavor that cooled and soothed our tongue with its nutty, briny, umami edge in a caramelized white chocolate.

Finally, we ended our Chinese chocolate flight with a dark chocolate featuring Honey Orchid Dancong Hongcha, a rare red (black) tea from the famed Phoenix Mountain of Guangzhou. It too delivered exactly as promised, with an intensely satisfying black-tea taste (which won it a gold medal in the 2019 International Chocolate Awards).

Tis the season of braises and the perfect time to try this Chinese comfort food, especially if you think of Sichuan cuisine as mostly stir-fries and noodles. This homey, easy, dutch-oven braise features chicken legs, dried shiitake mushrooms and roasted chestnuts, along with a slew of flavors from the Sichuan pantry: doubanjiang, light soy sauce, dark soy sauce, huajiao, star anise and chilies

Kathy made some changes to the family recipe—specifically, she skips the steps of killing and cleaning the chicken—but you'll definitely want to read Mala Mama's memories of how they made this dish in her Sichuan youth.
